3-Ingredient recipes to try during lockdown

During this time, where we’re supposed to stay home all day, we have a lot of free time on our hands. While some use it to binge-watch Netflix, others have seen this lockdown as a blessed opportunity to finally work on their cooking skills. We also order a lot of food during this time, since this is the only way we can treat ourselves when everything is closed! For those of you who don’t like spending hours in the kitchen, but still want to enjoy some delicious, home-made food, here are some easy recipes which require only three ingredients – and will save you time and money.

Baked eggs with bacon in avocado

Ingredients:

  • 3 Avocados
  • 6 Large eggs
  • 2 slices cooked bacon, crumbled
  • Salt and peppers, to taste

Optional toppings:

  • Fresh chives (2 teaspoons or to taste)
  • Cilantro (2 teaspoons or to taste)
  • Parsley (1 pinch dried or to taste)
  • Goat cheese
  • 2 cherry tomatoes, quartered

Preparation:

Preheat oven to 400 degrees F (200 degrees C). Slice the avocados in half and remove the pit, and then scoop out 1-2 tablespoon of the flesh to create a larger hole. Place the avocado halves on the edges of a baking dish, so they won’t tip over. Crack the eggs into a large bowl. Filling the avocados with eggs: gently spoon one egg yolk into the hole and continue spooning egg white until it’s full. Season each half with salt, pepper, bacon and other toppings of your choice. Place it in the oven for about 15-20 minutes or until the yolk has reached the desired consistency.

Black Bean soup

Ingredients:

  • 2 cans black beans
  • 1 cup of chicken broth (or vegetable broth, if you want to make it vegan)
  • Canned diced tomatoes (with chiles, if you prefer it spicy)

Topping ideas:

  • Lime juice
  • Sour cream
  • Avocado
  • Cilantro
  • Chives
  • Shredded cheese

Preparation:

Mix all ingredients in a pot. Bring them to boil, then reduce the heat and simmer for around 10 minutes. Remove from heat, add salt and pepper and blend it until it reaches the smoothness you wish (I prefer to leave some chunks of beans). Finally, add any of the optional topping ideas. You could also try it with some tortillas on the side.

Peanut butter cookies

Ingredients:

  • 1 cup peanut butter
  • 1 cup brown sugar
  • 1 beaten egg
  • chocolate chips – optional

Preparation:

Preheat the oven to 350 degrees F (170 degrees C). In a large bowl stir together all 3 ingredients until smooth and creamy. Let the dough stand for 15 minutes. Scoop out a spoonful of dough onto a nonstick baking sheet (roll mixture into small balls by hand, if you don’t have a scoop). Bake the cookies around 10-12 minutes, or until the bottom of the cookies looks golden brown. Let them cool on the trey for another 5 minutes before you can enjoy them.

 Mug peanut butter cake

Ingredients:

  • 1 large egg gently whisked
  • 3 table spoons peanut butter (preferably creamy and unsweetened)
  • 2 large table spoons of white sugar
  • Ice cream – optional

Preparation:

Mix all the ingredients until completely blended before spooning the mix into a microwave-safe mug – remember that it will rise, so don’t fill the mug completely to the end. Microwave for 50-60 seconds on a high temperature (it could require a little more time, depending on the microwave – you should be familiar with yours). Remove the mug from the microwave and let it cool for a few minutes. Add some ice cream on top, if you prefer. You will be surprised of how tasty this peanut butter mug cake is!
