Hog Maw
Identifying the ingredients of this Pennsylvania specialty is straightforward from its name. However, hog maw, despite its potentially adventurous connotation, actually refers to the stomach of a pig. This might sound unconventional to the average consumer, but it’s akin to a sausage encased in a natural casing, typically made from animal intestines.
Hog maw takes the stomach and fills it with a blend of potatoes, onions, sausage, and seasonings. While it may not appeal to everyone, this dish remains a winter tradition cherished by the Pennsylvania Dutch.
